Butterscotch Cookies



Its been sometime since i had done some baking.Well more of cakes and cookies meant more of calories .Did not want to pile up calories. But we had also reduced our purchase of biscuits  after reading Rujuta Divekar's Book" Dont lose your mind lose  your weight".So rather than buying from outside i decided to bake some at home.




Butterscotch cookies

Ingredients:

Flour- 1 cup
Baking powder-1/2 tspn
Custard powder( butterscotch)- 1/3 cup
Butter- ½ cup
Powdered sugar-1/3 cup
Milk -2 tbsp
Butterscotch essence-1/2 tspn

Sieve flour and baking powder together.Keep aside.
Mix the butter and sugar till creamy. Add butterscotch essence.
Now add the custard powder ,flour and milk  knead into a dough( i use my hand) .
Roll into small balls .
Flatten them and cut out shapes using moulds.In case you do not have moulds just flatten them into round shapes .
Place in a baking tray leaving  one inch gap between cookies.Bake them at 140C for about 14-16 minutes or till they turn golden brown.(I made them in convection mode in a microwave oven.Had to make sure that the oven had cooled down before i baked the next set.Is there an alternative way ?Suggestions welcome)
If making in an OTG ,preheat to 180C and bake for 13-15 minutes. 
( You can try other custard powders and essences).
