Mixed Fried Rice with Lemon Leaf flavour

Hello everyone.. how have all of  you been??? After a  long break am back on the blogosphere.I am not going into the reasons as to why i disappeared from the scene  and bore you with the long list of things i was doing in the meantime..Would just like to say that i  had  a  good break..spent some quality time with N exploring Dubai and reading a lot!! :)

Today am posting a mixed fried rice recipe.... a mixed fried rice recipe with lemon leaf flavour.

This is a recipe which was again my a last minute  decision as i had some left over prawns and chicken pieces.Eggs are mostly stocked so i had that ingredient too..So i had decided to put all that into rice.
I also had some lemon leaf which i had bought and when i opened the packet and smelt the leaf it took me back to Thailand.It reminded me of many dishes we had  during our trip to Thailand. We were mainly feasting on the street food there... the pad thai,crepes,fresh fruits neatly cut and packed into bags which we can carry around and eat,many other varieties  of noodles( names of which we did not know),yaki soba etc etc etc...

I would like to visit Thailand once more..may be Chiang Mai and the next time  i would like to take  a Thai cooking class!!!

Going to the recipe

Ingredients:

Rice- 1 cup
Butter - 1 to 1 1/2 tbsp
Lemon juice-2 tbsp
Water- 2 cups
Salt
Cooked chicken, prawns -1/4 or 1/2 cup each depending on  your preference.
Carrot,beans chopped and boiled - around 1  cup
Onion-1 chopped
Scrambled egg-1
Ginger ,garlic, greenchilli paste-around 1 1/2 tspn
Lemon leaf-2
Soya sauce-1 1/2 to 2 tbspn

How i made it?

Wash the rice well and soak it in water for half an hour.Drain the  water completely.
Heat a tbsp of butter in a pan and fry the rice till a cracking sound comes from the rice. Keep aside.
Boil water adding some lemon juice and salt and cook rice in this till done.
When rice is done spread  on a plate and  let it cool.

Heat butter and toss the boiled vegetables in it till the butter is coated well on the vegetables. Add the ginger,garlic green chilli paste.Mix well.
Then add the cooked chicken and prawns.
Add salt and soya sauce and mix well.Add the lemon leaf (tear into small pieces)
Now add the scrambled eggs  followed by rice.
Cover cooked for a minute or two so that the flavours mix well into the rice.
You can serve this rice with  vegetables in ginger sauce or any other chinese  type dish.
What i loved about this fried rice is the wonderful aroma from the lemon leaf and a small and sutle difference in flavour!

Notes:

I used basmati rice.You can use any long grained rice.
You may add more vegetables of your choice like cauliflower,capsicum etc.
You can let the vegetables cook in the pan but i pre- cooked them.

  9. My husband will definitely enjoy this. I have been trying out loads of thai dishes in the past few days and mamagato had this Chaigmai train station noodles with loads of spices and coconut milk. just thinking of it is making my mouth water. I love thai food too... :)
