Idli Upma

Idli upma.. a very very simple recipe to make from leftover idlis...a good item to be in the lunch box .. a very easy option to satisfy that evening hunger pang..just 5 minutes and its ready..

There are other versions of this  that upma i make , but i am keeping that for later... :)



using up leftover idlis for  a simple upma





























Ingredients:

Oil or ghee- 1-2 tbspns
Mustard seeds- 1 tspn
Split white urad dal-1/2tspn
Curry leaves- 6-7
Red chilli flakes - as reqd( or 2-3 dried red chillies)
Idlis-4(cut into small pieces)
Salt- as per taste
Fresh coriander leaves- as reqd

How i made it?

Heat the oil.Put in the mustard seeds and let it splutter.Add in the urad dal and the curry leaves.If you are using dry red chillies ,put that also in.Put in the idli pieces and then add in the chilli flakes.Give a good stir . Add in the salt.When the idlis are fried well , add in the chopped coriander and take off the stove.
Serve with a  hot sup of coffee or tea.
You can make this more spicy but for  a quick snack we at home prefer it this way.

Kadala Curry (Chickpeas curry)

Kadala curry-Kerala style chickpeas curryThe kadala curry is always associated with puttu (steamed rice cake) in Kerala.The kadala curry is a must have accompaniment with puttuu in our home.But it will also go well with chappathi, and idiyappam (string hoppers)In the north chole chawal is a famous combination but not in Kerala.

Puttu (Steamed Rice Cake)

Puttu is a  nutritious , fast ,healthy(oil free) recipe for breakfast.Puttu can be made from white rice, brown rice,wheat flour,ragi,corn etc. Puttu is made with layers of these alternating with coconut .It is made by wetting the flour gradually with water until the correct texture is achieved.

Tomato Chutney



Tomato chutney is a  very good accompaniment with idlis and dosas.CAn be made quickly with very few ingredients.

Ingredients

Oil-1 tablespoon
Onion- 2,medium sized,sliced long
Tomatoes -3,medium sized,sliced long
Green chilli-1( add according to your tase)
Kashmiri mirch-1 teaspoon( to give colour)
Fresh Coriander leaves -3-4 stems
Salt to taste

Saute onions .When slightly brown add tomatoes.Add the green chilli and the red chilli powder and salt and cook till tomatoes are cooked. Take off stove.
Add the coriander leaves and grind in a blender or mixie.If grinding hot ,keep a cloth over teh blender top  and grind.
The chutney is ready.Serve with hot hot idlis or doshas.



You may also  temper this chutney with mustard seeds,  dried red chillies and curry leaves.

This chutney can be used for  a day or two  if kept  refrigerated.

I sometimes add the leftover chutney when making dals.

Idlis





An  idli and dosha batter recipe!!!!! Well who doesn"t know to make idlis ..making idlis and doshas are common thing in South Indian homes but not up here in the north. Though i have found that they go gaga over idlis and 'dosas',(its doshas actually)I am frequently asked  by many of my north indian friends " Do you make the batter at home?".. Yes i do and its very simple.Now with so many cookery shows and recipe blogs, food is also becoming global.Was reading an article in Times Life today .It said "Sunday brunches are no longer about chola kulcha but about Indonesian  Laksa."We have people down south  trying the rajasthani kadi ,rasogulla,amritsari chicken, the non south people  making   idlis, uthappam,bisi bele bath etc..not forgetting the pastas,pizzaz,lasagnas,nase gorengs etc Its  a good feeling..more variety and variety is the spice of life!
