Blueberry Cupcakes

Am very happy today .I found  a shop in Cochin where i get all stuff related to baking or at least most of the stuff..:).. I was even happier when i found packs of blueberry filling.I love blueberries and this is something which is not very easily available in supermarkets.So i went ahead and bought it ( without even thinking what i will make) and then found this recipe(from my collection) and made it.The original recipe uses fresh blueberries but i used the filling i bought.Nevertheless the cupcakes were tasty.It had a tangy twist to it due to orange rind and the blueberry filling.

The big one was made in the traditional oven and  the small one in the MW oven.




Ingredients


1.Plain white flour- 175 gms
2.Baking Powder-1 tbsp
3.Unsalted Butter,Softened- 175 gms
4.Caster Sugar-175g
5.Eggs -3,beaten
6.1 tsp Vanilla extract
7.Finely grated rind of half orange
8. Fresh blueberries( can try with filling)- 150 g 

Method


Sift the flour and baking powder into a large bowl and add the butter ,caster sugar,eggs and vanilla extract.Beat well until the  mixture is smooth,then stir in orange rind and blueberries(keep a little for garnish).

Spoon in the mixture into paper cups or greased and dusted muffin trays. Bake in the preheated oven( preheated to 190 C) for 15 -20  minutes or until risen,firm and golden brown.

Remove cupcakes from tray and let it cool.

Note:I made a few in the traditional cake oven and rest in the MW oven(see pics).Those baked in the traditional oven took almost half an hour.In the MW it took almost 6 minutes on Convection Mode(Preheated to 200 C).
