Mutter Pulao

The simple and humble mutter pulao.....  Is  a detailed recipe required for something as simple as mutter pulao...ohhh yessss.... i had not eaten mutter pulao till i went to Delhi...unbelievable????actually mine is a very pucca Kerala household where the lunch menu was rice, a curry ( sambaar or moru curry or rasam or  kaalan or avial etc ) 2 side dishes( cabbage thoran, kowaka upperi ,chena kaya upperi etc ) and of course curd,pickles and pappadam.Sometimes there used to be an occasional fried rice.. that used to be mixed vegetable... so the poor mutter pulao had no place.So there may be someone else like me who may not have made  a mutter pulao till date... this is specially dedicated for them ;)

one pot meal with rice and peas



I was introduced to the mutter pulao at Navin's house in Delhi.And later after wedding that is something Navin would want at least once in a week.. specially winter season when the fresh peas come into the markets in Delhi.Now with frozen peas available its a year round food.
It is such a simple dish.. y  dint i know of it earlier????
Anyway once introduced to it it became a part of our regular menu.For Navin it is comfort food!!!.

The mutter pulao still does not have its place in my Kerala home but definitely once  a week in my home.. Specially on those lazy days when i don't want to spend  a long time in the kitchen !!(That happens more than once in a week!!!!)

Mutter pulao is definitely a savior on those days!!!! :)

Ingredients

Ghee- 2 tbsp
Pepper corns 3-4
Cloves- 3-4
Cumin seeds 1 tspn
Peas- 1/2 to 3/4 cup
Turmeric/haldi-1/2 to 3/4 tspn
Red chilli powder- 1tspn
Rice-1 cup ( basmati rice or raw rice preferred, i sometimes make it with ponni rice too)
Water- 1and 1/2 cup
Salt to taste
Coriander leaves for garnish

How i made it

Soak the rice in water for 20-30 minutes.
In a pressure cooker,heat the ghee.When hot add in the cloves and pepper and then the cumin seeds.
When the cumin seeds become darker and their aroma rises ,add in the turmeric and red chilli powder.
Stir well.
Now add the peas and mix well.
Add in the rice followed by 1and 1/2 cup water.Mix well.
Adjust salt.
Close the lid .The rice will be ready in 2 whistles depending on pressure cooker.

When all the heat  is released from pressure cooker ( say after about 15-20 minutes0 , garnish with coriander leaves and serve.
You may serve it with Curd and pickle or raita of any choice.
 Navin  likes to have it plain with some more ghee added to it.( i dont do that ... have to watch my weight;) )

Notes:

Cloves and pepper are optional, i like to add them
You may also add garam masala.I dont normally.( Navin likes it like how his mother used to make it.. ek dum simple)
Adjust red chilli powder according to your preference.

  2. I love mutter pulao... Come winters and this use to be frequently made at my home. I miss the fresh peas here in Kerala. Either we get dried ones or frozen. My husband and many Keralite friends had never seen peas in pods. It was so surprising until recently when I started to cook here I found out that we don't get fresh peas here.

    Your version of the pulao is quick and simple compared to my moms I will try this soon, you see I too feel lazy to cook everyday...:)

  3. Your mutter pulao looks so delicious! Like your husband, this is also a comfort food for me, which I regularly had growing up! I cook it the same way as you do, except that I fry finely chopped onions and a little amount of freshly-ground ginger garlic paste.
